LUV Mix Gluten-Free High-Protein Crackers (Everything Bagel)
Ingredients
- 1 cup (124 g) Gluten-Free LUV Mix
- 2 tsp olive oil
- 2 tsp melted butter (adds flavor)
- ¼ cup (60 g) water
- ½ tsp salt (optional)
Flavor:
- 1 tsp nutritional yeast
- ½ tsp garlic powder
- 1–2 tsp everything bagel seasoning (top after rolling)
Instructions (Upgraded Method)
1. Preheat (lower temp = better texture)
- Set oven to 325°F
2. Make dough
- Mix everything except bagel seasoning
- Form a firm, smooth dough
Adjust:
- Too dry → +1 tsp water. Too sticky → light dust of mix
3. Rest (don’t skip)
- Let sit 10 minutes
This improves:
- Rollability
- Final snap
4. Roll EXTRA thin
- Roll between parchment
- Target: paper thin (~1 mm)
5. Oil + season
- Lightly brush top with oil
- Add everything seasoning and press in
6. Cut + dock
- Cut into crackers
- Poke holes with fork
7. Two-Stage Bake
Stage 1:
- Bake at 325°F for 12–15 minutes
- Rotate pan halfway through
Stage 2 (drying phase):
- Lower oven to 300°F
- Bake another 8–12 minutes
You’re removing moisture, not just baking
8. Final crisp
- Turn oven OFF
- Crack the door open
- Leave crackers inside 10–15 minutes
9. Cool completely
- They will fully crisp as they cool
If they are still chewy, they were probably not rolled thin enough. Throw them back in the oven at 300°F for another 5-10 minutes. Turn the oven off, crack the door open and leave crackers inside for 10–15 minutes.
- Cut shapes with a pizza cutter (or knife) after the crackers are fully cooled.
Watch for this
- Edges brown faster → pull early if needed
- If still soft after cooling → they needed more drying time
